Description&Tasting :

EYES: Bright, peach-lychee color. Bright and clear.
NOSE: Intense nose of dried flowers (forget-me-not, rose and cherry blossom); secondarily, more fruity
with notes of white peach.
PALATE: A delicate and silky wine with aromas of peach and pomegranate. Long and deep finish of
orchard fruits.

Food&Wine paring :

White meats, salmon with pink peppercorns, prawns with pastis, duck, breast with cherry compote.

Soil Soil is a combination of clay and grit.
Wine Making Process includes skin contact for 6 hours, then pressing, fermentation at bewteen 59F° and 63F°, and aging in an underground cellar, carved from rock.
Vinification Grapes are harvested by machine at night. This method is best to keep the grapes at a low temperature and to press its juice before the heat of the day. Yield: 40 hl per hectare
